Radish and Green Garlic Dip


The zingiest elements of spring–radishes, onions, and young garlic–are well represented in this speedy little snack. Save some calories by using low-fat Greek yogurt instead of sour cream as the base. —Deborah Geering


1 bunch spring radishes
1 stalk green garlic, white and light green part only, finely chopped
2 green onions, finely chopped
1 cup Greek yogurt or sour cream
1/4 teaspoon kosher salt
8 to 10 fresh mint leaves, finely chopped
A few radish leaves, finely chopped


Grate enough radishes (approximately 5) to yield 3/4 cup. Squeeze between paper towels to remove extra moisture. Combine the radish, green garlic, and green onions in a small mixing bowl. Stir in the yogurt or sour cream, salt, mint leaves, and radish leaves. Chill for at least 30 minutes to blend flavors. Adjust seasoning. Serve with crackers and/or vegetables for dipping.
